Cornflakes Crispies

CNY is coming! Mummy has cornflakes cravings and we made our own cornflakes crispies over the weekend. As you can see we had so much fun eating and baking at the same time (The plain cornflakes are actually already very yummy and crispy!) These honey cornflakes cup are also known as Honey Joys but do you know some store bought goodies contains either lotsa extra sugar or use ingredients that's not mostly corn? That's not really joyful if you are feeding your kids with that. A lot recipes added white sugar in addition to honey (so sweet already still add sugar) and uses common brands fortified cornflakes which are in fact less than 50% inside are pure corn. We chose organic corn as there are reports on GMO. If you can find 100% corn cornflakes that's even better. It's very important to read the labels to make a better choice. 

I found this recipe using only butter and honey (no extra sugar!), and the results are really addictive! All of us had seconds (and thirds, and fourths..) simply because it's not very sweet and the kids enjoyed the crisp a lot! Maybe next batch we will try with lesser butter for health concerns. Try making this fast and easy 3-ingredients Honey Cornflakes with your child this weekend! 2 tbsp Honey (I only have manuka honey in our cupboard currently) 50 grams unsalted Butter (I use President brand) 150 grams Cornflakes (I use organic cornflakes bought from NTUC Finest, organic section) - Melt the honey and butter till frothy - Drizzle the mixture slowly into the cornflakes while mixing with spatula. - Mix well and spoon them into baking cups - Bake at 150degC for 10-15mins - Allow to cool before serving and the bits will stick together Recipe adapted from http://www.noobcook.com/cornflakes-cups/2/
